Potato Latkes

 

 

1 medium onion, finely chopped
3 medium potatoes, grated (about 3 cups)
2 eggs
1 teaspoon salt (or to taste)
1 teaspoon nutmeg
1 1/2 teaspoons dried sage
black pepper to taste
2 -3 tablespoons plain flour (all purpose flour)
oil for frying
 

1. Combine potatoes and onion in a clean kitchen towel and squeeze out the moisture. The drier the pulp is, the crispier the latkes will be
2. Mix all ingredients together (except for oil)
3. Heat about 2 tablespoons of oil in a large skillet over medium heat. Drop heaping tablespoons of the mixture into the oil and fry until cooked through and golden on both sides. Add more oil if needed
4. Drain on paper towels, and serve with sour cream
